Ingredients
- 1 serving of smoked salmon, flaked
- 2–3 cloves of garlic + 1 red or green chili, finely chopped together
- 1 egg
- 1 cup of cooked rice (preferably day-old rice)
- 2 tbsp corn kernels
- 1 tbsp cooking oil
- 1 tsp oyster sauce
- 1 tsp shoyu (soy sauce)
- ½ tsp sugar (for gentle balance)
- Black pepper, to taste
Instructions
- Prepare the aromatics:
Finely chop the garlic and chili together — this will be the heart of your flavor. - Cook the egg:
Heat a bit of oil in a pan and softly scramble the egg. Once cooked, push it to the side of the pan. - Sauté garlic and chili:
Add a little more oil if needed. Stir until the garlic turns golden and fragrant. - Add the salmon:
Flake in the smoked salmon and toss gently until it warms through. - Add rice:
Break up any clumps of rice and mix well, letting it soak up the aroma. - Season:
Stir in oyster sauce, shoyu, sugar, and a touch of black pepper. Adjust the flavor — it should be savory, slightly smoky, and softly sweet. - Add corn:
Toss in the corn last, giving the dish color and a bit of natural sweetness. - Serve warm:
