Smoke Salmon Fried Rice 🍚🍣

A cozy dish for quiet days — fragrant garlic, soft egg, sweet corn, and smoky salmon coming together in one warm bowl. Simple, a little spicy, a little sweet, and full of comfort.

Ingredients

  • 1 serving of smoked salmon, flaked
  • 2–3 cloves of garlic + 1 red or green chili, finely chopped together
  • 1 egg
  • 1 cup of cooked rice (preferably day-old rice)
  • 2 tbsp corn kernels
  • 1 tbsp cooking oil
  • 1 tsp oyster sauce
  • 1 tsp shoyu (soy sauce)
  • ½ tsp sugar (for gentle balance)
  • Black pepper, to taste

Instructions

  1. Prepare the aromatics:
    Finely chop the garlic and chili together — this will be the heart of your flavor.
  2. Cook the egg:
    Heat a bit of oil in a pan and softly scramble the egg. Once cooked, push it to the side of the pan.
  3. Sauté garlic and chili:
    Add a little more oil if needed. Stir until the garlic turns golden and fragrant.
  4. Add the salmon:
    Flake in the smoked salmon and toss gently until it warms through.
  5. Add rice:
    Break up any clumps of rice and mix well, letting it soak up the aroma.
  6. Season:
    Stir in oyster sauce, shoyu, sugar, and a touch of black pepper. Adjust the flavor — it should be savory, slightly smoky, and softly sweet.
  7. Add corn:
    Toss in the corn last, giving the dish color and a bit of natural sweetness.
  8. Serve warm:
    Plate it gently — simple, fragrant, and made with love.

Tip: You can sprinkle chopped green onions on top or serve with a wedge of lime for brightness.
